Prep Time & Servings
Prep Time: 15 minutes
Cook Time: 15 minutes
Marinating Time: 30 minutes
Servings: 4 bowls
Ingredients
For the Chicken & Marinade:
1.5 lbs boneless, skinless chicken breasts
2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
3 cloves garlic, minced
1 tbsp dried oregano
1 tsp paprika
½ tsp cumin
Salt and freshly cracked black pepper, to taste
For the Bowls:
3 cups cooked jasmine or basmati rice, warm
1 cup English cucumber, diced
1 cup cherry tomatoes, halved
½ cup red onion, finely diced
½ cup feta cheese, crumbled
Fresh parsley, chopped (for garnish)
For the Creamy Tzatziki Sauce:
1 cup plain Greek yogurt
½ cup cucumber, finely grated and squeezed dry
1 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
1 clove garlic, minced
1 tbsp fresh dill or parsley, finely chopped
Pinch of salt
Instructions
1. Marinate the Chicken
In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, paprika, cumin, salt, and pepper. Add the chicken breasts, turning to coat them evenly. Cover and refrigerate for at least 30 minutes (or up to 4 hours for maximum flavor).
2. Make the Tzatziki Sauce
While the chicken marinates, combine the Greek yogurt, squeezed grated cucumber, olive oil, lemon juice, minced garlic, fresh herbs, and a pinch of salt in a small bowl. Stir until smooth and creamy. Cover and chill in the fridge until ready to serve.
3. Cook the Chicken
Heat a cast-iron skillet or grill pan over medium-high heat with a splash of oil. Once hot, add the chicken breasts and cook for roughly 6 to 8 minutes per side, or until the exterior is nicely charred and the internal temperature reaches 165°F (74°C). Transfer to a cutting board, let it rest for 5 minutes, then slice into thin strips.
4. Assemble the Bowls
Divide the warm cooked rice evenly among four white ceramic serving bowls. Arrange the sliced grilled chicken on top, drizzling generously with the prepared tzatziki sauce. Neatly group the diced cucumber, halved cherry tomatoes, crumbled feta, and finely diced red onion around the chicken to create a bright, colorful spread.
5. Serve and Enjoy
Garnish with a sprinkle of fresh chopped parsley and an extra squeeze of lemon juice if desired. Serve immediately while warm, or store components separately in airtight containers for up to 4 days of easy meal prep!
