The Ultimate Lemon Blueberry Cream Cheesecake
This dessert is a beautiful study in contrasts: the sharp, sun-kissed brightness of fresh lemon curd cutting through the rich, velvety smoothness of a classic cream cheesecake, all punctuated by the sweet pop of fresh blueberries. Every layer is designed to build the perfect bite, starting from a textured, buttery base up to a light, pillowy finish.

For the Graham Cracker Crust
1 ½ cups graham cracker crumbs (about 11-12 full sheets)

For the Blueberry Cheesecake Layer
32 oz (four 8-oz blocks) full-fat cream cheese, softened to room temperature
1 cup granulated sugar
¼ cup sour cream, room temperature
1 tablespoon fresh lemon juice
1 teaspoon pure vanilla extract
4 large eggs, room temperature
1 ½ cups fresh blueberries, washed and dried thoroughly
1 tablespoon all-purpose flour (to toss with the berries)
For the Tangy Lemon Curd
4 large egg yolks
⅔ cup granulated sugar
1 tablespoon lemon zest (finely grated)
½ cup fresh lemon juice
⅛ teaspoon salt
6 tablespoons unsalted butter, cubed and softened
For the Whipped Cream & Garnish
1 cup heavy whipping cream, cold
¼ cup powdered sugar
1 teaspoon vanilla extract
1 cup fresh blueberries
Fresh lemon zest curls or ribbons
1 thin, translucent lemon slice
Step-by-Step Instructions
1. Bake the Golden Crust
Preheat your oven to 325°F (163°C). In a medium bowl, mix the graham cracker crumbs, sugar, salt, and melted butter until the mixture resembles wet sand. Firmly press the mixture into the bottom and slightly up the sides of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool completely. Wrap the outside of the pan securely in two layers of heavy-duty aluminum foil to prepare for the water bath.
2. Prepare the Creamy Cheesecake Filling
In a large bowl or stand mixer fitted with the paddle attachment, beat the softened cream cheese and sugar on medium speed until completely smooth and free of lumps. Add the sour cream, lemon juice, and vanilla, mixing until fully incorporated.
Reduce the mixer speed to low and add the eggs one at a time, mixing just until blended to avoid whipping excess air into the batter. In a small bowl, toss the fresh blueberries with the tablespoon of flour (this keeps them from sinking to the bottom), then gently fold them into the cheesecake batter by hand.
3. The Water Bath and Bake
Pour the batter over the cooled crust. Place the wrapped springform pan inside a larger roasting pan. Pour boiling water into the roasting pan until it reaches halfway up the sides of the springform pan.
Bake for 70 to 75 minutes, or until the edges are set and the center retains a slight, uniform jiggle. Turn off the oven, crack the oven door slightly, and let the cheesecake cool inside the oven for 1 hour. Remove from the water bath, let it reach room temperature on the counter, then refrigerate for at least 6 hours (preferably overnight).
4. Cook the Lush Lemon Curd
While the cheesecake chills, make the curd. Whisk the egg yolks, sugar, lemon zest, lemon juice, and salt together in a small, heavy-bottomed saucepan. Cook over medium-low heat, stirring constantly with a rubber spatula or whisk, making sure to scrape the bottom of the pan so it doesn't curdle. Cook for about 6–8 minutes until the mixture thickens enough to coat the back of a spoon.
Remove from heat and immediately whisk in the cubed butter, a few pieces at a time, until completely melted and glossy. Strain through a fine-mesh sieve into a bowl, press plastic wrap directly onto the surface of the curd, and chill until cold.
5. Assemble and Garnish
Once the cheesecake is thoroughly chilled, remove it from the springform pan. Spread a generous, vibrant layer of the chilled lemon curd across the top of the cake, letting it elegantly drip down the sides.
Whip the heavy cream, powdered sugar, and vanilla together until stiff peaks form. Load the whipped cream into a pastry bag fitted with a star tip and pipe a decorative border around the edge of the cake. Pile the center high with fresh, plump blueberries, scatter the bright yellow lemon zest ribbons over the top, and crown the peak of the dessert with a single glossy, translucent lemon slice. Slice with a warm, clean knife and serve.
