Golden and crisp on the outside, each sandwich is packed with warm, melted cream cheese filling and sweet, macerated fresh strawberries that burst with juice in every bite. Finished with a snowy dusting of powdered sugar, it makes an unforgettable weekend brunch or show-stopping dessert.
Ingredients
Yield: 2 generous stuffed sandwiches
Bread & Batter:
4 thick slices brioche, challah, or Texas toast
2 large eggs
1/4 cup whole milk or heavy cream
1 tsp pure vanilla extract
1/2 tsp ground cinnamon
2 tbsp unsalted butter (for the skillet)
Cheesecake Filling:
4 oz (1/2 block) cream cheese, softened to room temperature
2 tbsp powdered sugar
1/2 tsp lemon zest or 1 tsp fresh lemon juice
1/4 tsp pure vanilla extract
Strawberry Layer & Garnish:
1 cup fresh ripe strawberries, sliced thin
1 tbsp granulated sugar
Extra powdered sugar for dusting
Fresh mint leaves or halved strawberries for serving
Instructions
Macerate the Strawberries: In a small bowl, toss the sliced strawberries with the granulated sugar. Let them sit at room temperature for 10–15 minutes until they become glossy, soft, and release their natural juices.
Whip the Cheesecake Filling: In another bowl, beat the softened cream cheese, powdered sugar, lemon zest (or juice), and vanilla extract until completely smooth, airy, and spreadable.
Assemble the Sandwiches: Spread half of the cheesecake mixture evenly over one slice of brioche, leaving a small 1/4-inch border along the edges. Layer a generous amount of macerated strawberry slices directly over the cream cheese. Top with a second slice of brioche and gently press the edges together to seal the filling inside. Repeat for the second sandwich.
Prepare the Custard: In a wide, shallow dish, whisk together the eggs, milk (or heavy cream), vanilla extract, and cinnamon until well blended.
Pan-Fry to Perfection:
Melt 1 tablespoon of butter in a large non-stick skillet or cast-iron pan over medium-low heat.
Dip each assembled sandwich into the egg mixture for about 10–15 seconds per side, allowing the bread to soak up the custard without becoming soggy.
Place the sandwiches into the skillet. Cook for 3–4 minutes on the first side until deep golden brown and crisp.
