Graham Cracker Crust
1 ½ cups graham cracker crumbs
¼ cup light brown sugar, packed

24 oz (3 blocks) full-fat cream cheese, softened to room temperature
¾ cup granulated sugar
3 large eggs, room temperature
1 teaspoon pure vanilla extract
¼ cup sour cream, room temperature

1 tablespoon lemon juice
1 tablespoon light brown sugar

Instructions
Step 1: Prep the Oven & Pan
Preheat your oven to 325°F (160°C).
Grease a 9-inch springform pan lightly with nonstick spray or butter, then line the bottom with a circle of parchment paper.
Step 2: Make the Crust
In a medium bowl, mix the graham cracker crumbs, brown sugar, ground cinnamon, and melted butter until evenly moistened.
Press the mixture firmly into the bottom and slightly up the sides of the springform pan.
Bake for 8 to 10 minutes until set, then remove and set aside to cool while preparing the filling.
Step 3: Prepare the Apple Layer & Streusel
Apple Layer: In a small bowl, toss the diced apples with lemon juice, brown sugar, cinnamon, and nutmeg. Set aside.
