For the Cake:
3/4 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/2 tsp salt
3 large eggs, room temperature
1/2 cup granulated sugar
2 tbsp vegetable oil
1 tsp vanilla extract
2 cups finely grated fresh carrots (packed)
For the Cream Cheese Frosting:
8 oz cream cheese, softened
6 tbsp unsalted butter, softened
1 cup powdered sugar, sifted
1 tsp vanilla extract
Finely grated carrots (for garnish)
Instructions
Prep the Oven and Pan: Preheat your oven to 375°F (190°C). Grease a 10x15-inch jelly roll pan, line it with parchment paper, and lightly grease the top of the paper.
Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
Beat the Wet Ingredients: In a large bowl, beat the eggs and granulated sugar on high speed for 3 minutes until thick and pale. Beat in the vegetable oil and vanilla extract.
Combine and Add Carrots: Gently fold the dry ingredients into the wet mixture until just combined. Fold in the finely grated carrots.
Bake: Spread the batter evenly into the prepared pan. Bake for 10 to 12 minutes, or until the top of the cake springs back when gently touched.
Roll the Warm Cake: While baking, lay a clean kitchen towel flat on the counter and dust it generously with powdered sugar. Immediately turn the hot cake out onto the towel.
