Ingredients
For the Roasted Cauliflower & Chickpeas
1 large head cauliflower, cut into bite-sized florets
1 can (15 oz) chickpeas, rinsed, drained, and thoroughly patted dry
3 tbsp olive oil
1 tbsp ground cumin
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp ground turmeric
1/2 tsp ground cinnamon
1/2 tsp sea salt
1/4 tsp freshly cracked black pepper
For the Bowls
3 cups cooked white rice (basmati or jasmine work great)
1 cup English cucumber, thinly sliced
1 cup cherry tomatoes, halved
For the Creamy Green Herb Dressing
1/2 cup plain Greek yogurt (or dairy-free unsweetened yogurt)
1/4 cup fresh cilantro or parsley, finely chopped
1 tbsp lemon juice
1 clove garlic, minced
1–2 tbsp water (to thin as needed)

Instructions
Preheat & Prepare:
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Season the Cauliflower & Chickpeas:
In a large bowl, combine the cauliflower florets and dried chickpeas. Drizzle with olive oil, then sprinkle the cumin, smoked paprika, garlic powder, turmeric, cinnamon, salt, and pepper over top. Toss well until everything is evenly coated.
Roast:
Spread the mixture in a single layer on the prepared baking sheet. Bake for 22 to 25 minutes, flipping halfway through, until the cauliflower is tender with golden brown edges and the chickpeas are slightly crispy.
Make the Dressing:
