Ingredients
1 lb lean ground beef (or ground turkey)
1 medium yellow onion, diced
1 medium red bell pepper, chopped
1 medium green bell pepper, chopped
2 cloves garlic, minced
4 cups low-sodium beef broth
1 can (14.5 oz) diced tomatoes, with juice
1 can (8 oz) tomato sauce
1 tsp Italian seasoning
½ tsp smoked paprika
Salt and fresh black pepper, to taste
2 cups cooked white or brown rice
1 cup shredded Cheddar or Monterey Jack cheese (for topping)
Fresh parsley, chopped (for garnish)
Instructions
Brown the Meat & Veggies
Heat a large dutch oven or soup pot over medium-high heat. Add the ground beef and diced onion. Cook for 5–6 minutes, breaking up the meat until no longer pink. Drain off any excess fat if needed.
Add Aromatics & Peppers
Stir in the chopped red bell pepper, green bell pepper, and minced garlic. Sauté for about 2–3 minutes until slightly softened and fragrant.
Simmer the Soup
Pour in the beef broth, diced tomatoes, tomato sauce, Italian seasoning, smoked paprika, salt, and pepper. Stir well to combine. Bring the liquid to a gentle boil, then turn down the heat to low, cover, and simmer for 10–12 minutes until the peppers are tender.
Stir in the Rice
Stir the cooked rice into the pot and let it simmer uncovered for another 2–3 minutes until heated through. (Note: Adding cooked rice right at the end keeps it from absorbing all the broth and getting overly soggy!)
