Prep Time & Yield
Prep Time: 15 minutes
Cook Time: 15 minutes
Servings: 2 portions
Ingredients
For the Chicken Katsu:
Chicken: 2 boneless, skinless chicken breasts (or cutlets)
Panko: 1 cup Japanese panko breadcrumbs
Flour: ¼ cup all-purpose flour
Egg: 1 large egg, lightly beaten
Seasoning: ½ tsp garlic powder, salt, and freshly cracked black pepper to taste
Oil: Neutral oil with a high smoke point (vegetable, canola, or peanut oil) for frying
For Serving & Garnish:
Rice: 2 cups cooked warm white short-grain rice (sushi rice works great)
Sauce: ¼ cup store-bought or homemade Tonkatsu sauce
Garnish: Finely chopped fresh chives or green onions
Step-by-Step Instructions
1. Prep and Tenderize the Chicken
Pat the chicken breasts dry with paper towels. Slice each breast horizontally through the middle to create two thinner cutlets. Place them between sheets of plastic wrap and gently pound them to an even ½-inch thickness using a meat mallet or rolling pin. Season both sides generously with salt, pepper, and garlic powder.
2. Set Up the Dredging Station
Set out three shallow bowls:
Bowl 1: All-purpose flour.
Bowl 2: Beaten egg.
Bowl 3: Panko breadcrumbs.
3. Bread the Cutlets
Coat a piece of chicken in the flour, shaking off any excess. Dip it into the egg wash, allowing the extra to drip off, then press it firmly into the panko breadcrumbs until completely covered with a thick, even layer. Repeat for all cutlets.
4. Fry to Golden Perfection
Pour oil into a deep skillet or frying pan until it reaches about ½-inch deep. Heat over medium-high heat until hot (around 350°F / 175°C). Carefully lay the chicken cutlets into the hot oil. Fry for 3–4 minutes per side until deeply golden brown and cooked through (internal temperature of 165°F).
Transfer the fried chicken to a wire rack or paper-towel-lined plate to drain and stay crispy.
5. Assemble the Plate
Scoop a generous mound of hot white rice onto each serving plate. Slice the crispy chicken katsu into thick, bite-sized strips and lay them directly over the bed of rice. Drizzle rich, glossy tonkatsu sauce over the top and finish with a sprinkle of fresh chives. Serve immediately while hot!
