Prep Time & Yield
- Prep Time: 15 minutes
- Cook Time: 15 minutes
- Total Time: 30 minutes
- Servings: 2 generous bowls
Ingredients
For the Chicken Katsu
- 2 boneless, skinless chicken breasts, sliced horizontally into 4 thin cutlets
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups Japanese panko breadcrumbs
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- Neutral frying oil, such as vegetable, canola, or peanut oil
For Serving
- 3 cups cooked white rice (Japanese short-grain or jasmine rice)
- Tonkatsu sauce (store-bought or homemade)
- 2 tablespoons chopped chives or green onions
Instructions
Step 1: Prepare the Chicken
Place the chicken cutlets between two sheets of plastic wrap and gently pound them to an even 1/2-inch thickness using a meat mallet or heavy skillet. Season both sides with salt, black pepper, and garlic powder.
Step 2: Bread the Chicken
Arrange three shallow bowls:
- Flour in the first bowl
- Beaten eggs in the second
- Panko breadcrumbs in the third
Coat each cutlet lightly in flour, shaking off any excess. Dip it into the beaten eggs, then press firmly into the panko breadcrumbs until evenly coated for a thick, crispy crust.
Step 3: Fry Until Crispy
Pour about 1/2 inch of neutral oil into a large skillet and heat over medium-high until it reaches 350°F (175°C).
Carefully add the breaded chicken and fry for 3–4 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).
Transfer the cooked chicken to a wire rack set over a baking sheet to drain, helping the coating stay crisp.
Step 4: Assemble the Bowls
Let the chicken rest for 2 minutes before slicing into strips.
Divide the warm cooked rice between two serving bowls. Arrange the sliced chicken over the rice, drizzle generously with tonkatsu sauce, and garnish with chopped chives or green onions.
Serve immediately while hot and enjoy every crispy, flavorful bite.
