  • Prep Time: 25 minutes

  • Chill Time: 6 hours (or overnight)

  • Servings: 8–10 slices

Ingredients

Graham Cracker Crust

  • 2 cups graham cracker crumbs (about 14 whole sheets)

  • 1/3 cup light brown sugar, packed

  • 1/2 cup (1 stick) unsalted butter, melted

  • 1/2 tsp ground cinnamon

No-Bake Cheesecake Filling

  • 16 oz (2 blocks) full-fat cream cheese, softened to room temperature

  • 1 cup powdered sugar

  • 1 tsp pure vanilla extract

  • 1 tbsp fresh lemon juice

  • 1 1/4 cups heavy whipping cream, cold

Peach Cobbler Topping

  • 3 large fresh peaches, peeled, pitted, and sliced (or 16 oz canned/frozen peaches, drained)

  • 3 tbsp light brown sugar

  • 1 tbsp unsalted butter

  • 1/2 tsp ground cinnamon

  • 1 pinch ground nutmeg

  • 1 tsp cornstarch mixed with 1 tbsp cold water (slurry)

  • Warm caramel sauce (for drizzling)

Stovetop Cobbler Crumble

  • 1/2 cup all-purpose flour

  • 3 tbsp brown sugar

  • 1/4 tsp cinnamon

  • 3 tbsp unsalted butter, melted

Instructions

Step 1: Make the Crust

  1. In a medium bowl, combine the graham cracker crumbs, brown sugar, melted butter, and cinnamon. Stir until the mixture resembles wet sand.

  2. Pour the mixture into a 9-inch springform pan. Press the crumbs firmly and evenly into the bottom and slightly up the sides using the back of a measuring cup or glass.

  3. Place the pan in the freezer to set while you prepare the filling.

Step 2: Prepare the Cheesecake Filling

  1. In a large mixing bowl (or stand mixer fitted with the paddle attachment), beat the softened cream cheese, powdered sugar, vanilla extract, and lemon juice on medium-high speed for 2 to 3 minutes until smooth and completely lump-free.

  2. In a separate chilled bowl, whip the cold heavy cream on high speed until stiff peaks form.

  3. Gently fold the whipped cream into the cream cheese mixture using a silicone spatula until thoroughly combined and fluffy. Be careful not to deflate the mixture.

  4. Spoon the filling over the prepared crust and smooth the top evenly with an offset spatula.

  5. Cover tightly with plastic wrap and refrigerate for at least 6 hours (overnight is best) until fully set and firm.

Step 3: Make the Stovetop Crumble

  1. In a small bowl, mix the flour, brown sugar, and cinnamon. Pour in the melted butter and stir with a fork until small, sweet clumps form.

  2. Heat a small non-stick skillet over medium heat. Add the crumble mixture and toast for 4 to 5 minutes, stirring continuously, until golden brown and fragrant.

  3. Remove from heat and let cool completely.

Step 4: Cook the Peach Topping

  1. In a saucepan over medium heat, melt 1 tablespoon of butter. Add the sliced peaches, brown sugar, cinnamon, and nutmeg.

  2. Cook for 5 to 7 minutes, stirring gently, until the peaches soften and release their juices.

  3. Stir in the cornstarch slurry and simmer for another 1 to 2 minutes until the syrup thickens into a rich, glossy glaze.

  4. Remove from heat and allow the peaches to cool completely to room temperature before assembling.

Step 5: Assemble & Serve

  1. Once the cheesecake is set, carefully run a thin knife around the inside edge of the springform pan and release the outer ring.

  2. Top the cheesecake generously with the cooled cinnamon peaches.

  3. Sprinkle the toasted cobbler crumble over the peaches.

  4. Drizzle warm caramel sauce over the top right before slicing and serving.

Baker's Tip: Make sure your cream cheese is truly at room temperature before beating it to avoid lumps, and ensure the cooked peach topping has cooled completely so it doesn't melt the chilled cheesecake base!
